When a restaurant goes viral on social media, the sudden demand can be overwhelming. A popular TikTok influencer featured Aunt Bill’s Soul Food Cafe in Katy, Texas, and the floodgates opened. People waited in line for four hours to taste the restaurant’s brisket hot dogs and waffles. To adjust quickly, owner Kevin Muccular bought all the ingredients he could find at nearby Sam’s Club and Walmart stores and had friends check stores in their areas. ABC News examined how Muccular and other viral small restaurants revamped their operations and leveraged viral attention for long-term success.
